“Noodles are a representation of a long and prosperous life. Growing up, a tradition on our birthdays was to have noodles. Even till now, I have to have noodles on my birthday and I make noodles for my staff at work on their birthday. My favourite of my mother’s noodles was her oyster sauce noodles. Till this day, it is the most comforting bowl of noodles I could ever ask for. The way she does it is a little bit far too complicated for my life style, especially when I wake up hungover mid-day craving something comforting quick. Being away from home for so long, I have adapted this recipe for ease but delivers the same warm and fuzzy feeling every time I have it.”
