Ramen Breakfast

Ingredients

 

  • 50g udon or ramen noodles

  • 1 egg, soft boiled, peeled

  • 2 rashers streaky bacon

  • 150ml well flavoured hot chicken stock

  • Small handful sprouted seeds eg alfalfa

  • 2 Tbsp Lee Kum Kee Japanese Style Sesame Dressing

  • Thinly sliced spring onions

Method​

Cook the noodles as directed on package then drain. Grill or fry bacon cut into pieces.

Pour hot stock into warm bowl, add noodles.

Top with the halved egg and bacon, drizzle over Japanese Style Sesame Dressing. Add sprouted seeds and sliced spring onions.

Tips

Leek can be used instead of spouted seeds. Use ready cooked whole wheat noodles for convenience. If you like spice, sprinkle over chilli flakes.
