Warm Mushroom And Cherry Tomato Salad

Serves 2

Ingredients

 

  • 250g white mushrooms, thickly sliced

  • 2 Tbsp light olive oil

  • 1 clove garlic, finely chopped

  • 125g cherry tomatoes, halved

  • 2-3 handfuls baby spinach leaves

  • 2-3 Tbsp Lee Kum Kee Chinese Style Vinaigrette Dressing

Method​

Prepare and cut ingredients.

Heat oil in a pan, add mushrooms, stir-fry for 4 minutes. Add garlic and cook for 1 minute, stirring, remove from heat and cool for 2 minutes. Add Chinese Style Vinaigrette Dressing and toss together.

Divide spinach between serving plates. Scatter over tomatoes then the mushrooms, serve while the mushrooms are warm.

Tips

Replace spinach leaves with other salad leaves, eg pak choi. Scatter over toasted pumpkin seeds if wished.
